Vermouth is a dry fortified wine flavored with a variety of herbs and spices. Originating from France and famously used in martinis and other cocktails. Sweet vermouth comes from Italy known for its sweet, spicy characteristics, and often applied to dessert recipes.
Vermouth can be used instead of wine in cooking, and the herb notes will be stronger than an average wine. When substituting vermouth for wine use a little less if concerned about it overpowering the dish.
Vermouth costs much less than an average bottle of wine and can be stored longer in a home refrigerator. The alcohol in vermouth will dissipate and only flavors and smells remain.
Sweet vermouth can be used to poach pears leaving the fruit with a seductive red color, and a sweeter taste.
